Vegetables heavy Meals
An all-time favorite meatless burger. The nutburger is tasty, satisfying and filling, without leaving you with the heavy feeling after eating a beef burger. And it's healthier too!1 cup cheddar cheese, shredded
1 cup toasted wheat germ or cooked rice
1 cup parsley, finely chopped
3 stalks celery, minced
1 onion, minced
1 cup walnuts, finely chopped
1 green or red pepper, finely chopped
1 tsp salt
1 tbsp basil
2 tsp curry powderMix all together in a big bowl, drop batter into patties in hot olive oil in skillet. Use just enough oil to cover the pan bottom. Cook until golden brown. Serve on a bun just like a hamburger, with red onion slices, lettuce, tomato slices......the works!
Colcannon is a traditional dish in Ireland, and it can be served as a breakfast, lunch or dinner meal. Generous amounts of egg and potato make this a filling recipe. A breakfast of Colcannon will give you the fuel to work hard till lunch, and without needing meat.6 cups frozen hash browns with peppers, if available
1 medium onion
1 C milk
1 large bunch of fresh kale, approx. 5 cups chopped1/2 tsp nutmeg, or to taste6 eggs1 C. shredded cheddarOil a 9x13 pan. Set oven to 375°.
Clean kale, remove stems, and chop kale. Chop onion, fry in small amount olive oil until brown and soft. Add kale & stir until kale is slightly cooked. Add salt and pepper to taste, and 1/2 teaspoon nutmeg.
Remove from heat. Spread frozen Hash browns in bottom of casserole. Add milk. Top with kale and onion mixture. If using skillet, mix potatoes into sauteed veg's, then pour milk over. Make 6 'wells' and break an egg into each well. Top casserole with shredded cheddar cheese. Bake until eggs are set. Time varies by oven, usually 35-40 minutes.
Freezing, thawing and squeezing tofu makes it more chewy and meat-like in texture, and also makes it absorb more of the juices in the dish. Some tofu brands lends themselves to this process better than others, but since not all tofu brands are available everywhere, one has to figure this out by trial and error.
Denver brand tofu works well with this method, Melissa's brand not so much. White Wave extra firm tofu has a good, meaty texture - just dice it and toss it in.1 lb tofu (firm or extra-firm): freeze, thaw, squeeze moisture out and cut into bite-size pieces.

My partner left this afternoon on a business trip. I squandered the dinner hour shopping eBay and surfing CL. As a result, I decided to make something quick for dinner, and settled on one of the "Meals Ready to Eat" (MREs) that I had taken from our Department's out-of-date emergency provisioning stores, stockpiled when everyone was going nuts after 9/11.
I chose the "Turkey and Savory Vegetables" for my dinner. Although no preparation is necessary, I decided on the gourmet route and chose to heat the main packet. There were also numerous smaller packets, containing crackers, strawberry jelly, a chocolate covered graham cracker, diced peaches in heavy syrup, a packet of orange...

Don't serve roast chicken two meals in a row. Alfredo sauce is pretty tired/heavy/overdone, I'd skip it. Honestly, visitors to SF *should* eat a lot of meals out. There are so many great places to eat, and there are LOTS of places that are really bargain/budget friendly, if you hit the "ethnic" places that are more family style rather than trendy. I wouldn't want to come to SF to eat Costco food night after night . . . but food is important to me and when I travel or go on vacations, I want to try the local cuisine and get out. Maybe you can make some nice breakfasts or something? BTW, it's better to tell someone you aren't a great cook but that you're trying to learn and want to make it a project to get better SOON! than to try to impress them and fall short of your big talk
