Vegetable Meals to Freeze
More and more people are turning to vegetarian foods as a lifestyle choice. Whether you are eating more meatless meals because of health reasons, as a moral choice, or just because it's cheaper, here are some great make ahead freezable vegetarian recipes. When you're home after a hard day at work, there's nothing better than pulling a delicious dinner out of the freezer or fridge, popping it in the oven or microwave and just sitting back to relax as your dinner cooks.
Plus, a diet that's low in fat and high in fiber rich foods like grains, legumes, fruits and vegetables may help decrease your risk of developing diseases. And they taste wonderful too!
I really like freezing these recipes in smaller portions,
- Oniony Spaghetti Sauce
This sauce uses the wonderful vegetable protein crumbles I have talked about in other articles. It freezes beautifully and the sweet onion flavor is delicious.
- Spicy Rice Meatballs
To me, rice is such a satisfying ingredient that it makes a great substitute for meat. The nutty flavor and chewy texture of these meatballs will please everyone in your family.
- Veggie Pasta Shells
If your kids love pasta and cheese, this is a great way to get some extra veggies into their diet. One or two of these shells, individually frozen and then thawed in the microwave, makes a great quick lunch.
- Corn Waffles
Make these waffles on a leisurely weekend, then freeze, individually wrapped. Heat them in your toaster, then top with tomato salsa, a little cheese, and sour cream for a fabulous meal.
- Spicy Chili over Polenta
These easy spicy chili only uses five ingredients. Freeze it in individual portions, then reheat and serve over purchased prepared polenta. The combination of corn and legumes makes complete protein.
- Veggie Jambalaya
Jambalaya is a fabulous one dish meal. This meatless version that uses a variety of beans and rice is spicy and full of flavor.

This delicious slaw stays crisp and fresh in the freezer. While not a main dish, it's so unusual to find a frozen vegetable salad I had to include it. And you can use it to make Fish and Slaw Tostadas.

Everybody loves lasagna. And with this flavorful version, no one will miss the meat. There are two ways to reheat this dish - in the oven and in the crockpot!

3/4ths full of home cooked food. Though I live alone, I get in the mood to cook large batches from time to time. Right now I've got marinated chicken breasts, tomato sauce, green pepper soup, salmon patties, cabbage roll soup, meatloaf, brown rice, tuna noodle casserole, lasagne and chili packaged in individual portions for grab, nuke and eat meals.
I try and take some things out a night or two before to let them thaw in the refrigerator--like the chicken breasts, tuna noodle casserole and lasagne--since they nuke better that way.
For a busy friend's birthday I made her a month's worth of about 6 different entrees; she just adds a vegetable or salad to it, and dinner is done

Winter mornings and it's there if I'm snowed in and can't get milk for cereal. Sometimes I'll do a breakfast casserole and freeze individual portions to have on hand.
I always freeze individual meals immediately after cooking and have them in the freezer. I could be snowed in for a month and have good home cooked meals each day. lol. I have chili, beef barley soup, vegetable chowder, split pea and ham soup, turkey stew, beefaroni, tuna casserole, pizza casserole and I don't know what else frozen right now.
If I were snowed in I'd miss salads and fresh veggies, but I sure wouldn't starve.
